Chinese Lemon Chicken!


Ingredients: (Marinade)
  • 2 1/2 lbs. chicken
  • 2 TB soy sauce
  • 1/2 tsp salt


Ingredients: (Batter)
  • 2 eggs
  • 1/4 C cornstarch
  • 1/2 tsp baking powder
  • 1 pinch pepper
  • oil (for frying)
Ingredients: (Sauce)
  • 1/3 C sugar
  • 1 C chicken broth
  • 1 1/2 TB cornstarch
  • 2 TB lemon juice
  • 3/4 tsp salt
  • 3 slices of lemon
  • 2 TB oil
Directions:
  1. Mix chicken with the marinade ingredients and marinade in the fridge for 30 minutes in a covered bowl.
  2. Mix the ingredients for the batter, except for the oil, and coat the chicken.
  3. Heat the oil in a wok to 350 degrees. Add the chicken to the oil and fry until lightly brown, you can check to make sure they r done by cutting one in half if you are not sure. When they are done frying set them aside on paper towels that have been placed on a plate.
  4. Mix together the first five ingredients from the sauce ingredients. When it has all be mixed together well add in the slices of lemon.
  5. Clean out your wok and place back on the stove. Put 2 TB of oil into the wok and heat, then add the lemon sauce and stir until it has become clear.
  6. Pour the sauce over the chicken and toss making sure to coat well. Serve over rice.
